~ Summer's Last Pasta Salad ~

I love making this... and then having it for a meal in itself!

I cook and drain some garden (I like the different colors!) Rotelli noodles, then I like to throw in an assortment of diced meat (I either use pepperoni or turkey ham), diced cheese, pickles, black olives, broccoli (if on hand), mayonnaise and Lawry's seasoning salt to taste! Garnish with Parmesan cheese if desired! I use no measurements, but it always turns out great! Enjoy!

~ Chocolate Dipped Macaroons ~

Who doesn't like chocolate? Very few people.... but if you don't like coconut, then this is not for you... all of us that do though, will be HAPPY to eat them for you!!!

That yummy crispiness on the bottom edges gives the PERFECT crunch under that chocolate-y goodness.


Ummm....... Can you taste it already??


Ingredients

  • 14 ounces sweetened shredded coconut
  • 14 ounces sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 2 extra-large egg whites, at room temperature
  • 1/4 teaspoon kosher salt

Directions

Preheat the oven to 325 degrees F.

Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.

Drop the batter onto sheet pans lined with parchment paper (DO NOT USE WAX PAPER! I tried. It doesn't work - trust me!) using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Remove from oven, let cool for a couple minutes then remove to wire rack. Dip in melted chocolate (put in fridge to harden for a little bit) and serve.

~ Chewy Granola Bars ~

Perfect for road trips, picnics or just plain snacking....


Chewy Granola Bars

9 cups Rice Chex (or Crispix), crushed
6 cups quick oatmeal
1 cup graham cracker crumbs
1/2 cup wheat germ (I used sunflower seeds)
16oz & 10oz bags or 15 cups marshmallows
1 cup butter
1/2 cup honey
1 1/2 cups M&Ms, chocolate chips or raisins (or mix and match!)

Mix all dry ingredients (except the last ingred.) in a very large bowl. Melt marshmallows and butter in a saucepan. Stir the whole time. When melted, remove from stove and add honey. Pour over mixture. Mix well. Mix in your choice of yummys... Press into a buttered 11x15 jellyroll pan. Let harden then cut into squares. Enjoy!

To make it easier when on a trip, I wrapped each square individually!

~ Blueberry Chicken Salad ~

Is your mouth watering yet??


I just make it up, but it was DE-LISH!!!

Here are the ingredients I used:
* Lettuce
* Cucumbers
* Avocados
* Cooked Chicken
* Mozzarella Cheese
* Parmesan Cheese
* Fresh Blueberries!

And if I had room left in the bowls and hadn't forgotten.... I would have added diced, hard-boiled eggs and black olives! Yummy!!!! But it was yummy as it was! (that is with Ranch on top to complete it!)
